Simple Whole Wheat Bread
Cook: about 45 min
Serves: 2 loaves

Ingredients
- 3 c. warm water
- 2 T. active dry yeast
- 1/4 c. honey
- 2 t. salt
- 1/4 c. gluten flour
- 4 c. whole wheat flour
- 3 1/2 to 4 c. unbleached white flour
Directions
- Dissolve the yeast in the water. Mix in 3 cups of the whole wheat flour and let rise for 15 minutes.
- Add the honey and salt. Stir. Then add 1 cup of flour at a time, mixing after each one (start with the gluten flour).
- Knead the dough until it is firm (not dry).
- Shape into 2 loaves and put in sprayed bread pans. Let rise until doubled in size.
- Bake at 350°F for about 45 minutes. You can cover with foil part way through to keep it from getting too dark.
- Spray the top of the bread with no-stick spray after taking it out of the oven.
Notes
- This recipe works in a bread machine. I do a half recipe (one loaf) on the 1 1/2 pound setting.
