Savory Masa Harina Waffles

Ingredients
- 1 cup (93 g) masa harina
- 3 tablespoons (37 g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon table salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 2 large eggs
- 3/4 cup (170 g) milk
- 2 tablespoons (25 g) vegetable oil
- 1 tablespoon (14 g) butter, melted
Directions
- In a large bowl, whisk together the masa harina, sugar, baking powder, salt, garlic powder, onion powder, and chili powder.
- In a separate bowl, beat the eggs lightly, then add the milk, vegetable oil, and melted butter. Mix well.
- Pour the wet ingredients into the dry and stir just until combined. A few small lumps are fine, so you avoid overmixing.
- Let the batter rest 5-10 minutes so the masa harina fully hydrates.
- Preheat the waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray or oil.
- Pour the batter onto the waffle iron, usually about 1/2 to 3/4 cup depending on your iron. I use a large cookie scoop in each of the four quadrants, which creates separate smaller units.
- Cook until the steam stops and the waffles are golden brown, about 3-5 minutes.
- Remove carefully with a fork or tongs to avoid scratching the waffle iron. Serve immediately for best texture and flavor.
Notes
- Serve with sweet toppings (maple syrup, honey) or savory accompaniments (sour cream, salsa, avocado). They make a great bed for molcajete or other spicy dishes. See Warm Molcajete Salsa.
