Ribbon Salad
A three-layer gelatin salad (lime, a creamy lemon layer, then cherry) in a 14x10x2 pan.
Ingredients
Lime layer:
- 2 (3 oz) packages lime flavored gelatin
- 2 cups hot water
- 2 cups cold water
Creamy layer:
- 1 (3 oz) package lemon flavored gelatin
- 1 cup hot water
- 1/2 cup miniature marshmallows
- 1 cup pineapple juice, drained from the pineapple
- 1 (8 oz) package cream cheese
- 1 can crushed pineapple (see note)
- 1 cup heavy cream, whipped, or 1 packet Dream Whip
- 1/2 cup mayonnaise
Cherry layer:
- 2 (3 oz) packages cherry flavored gelatin
- 2 cups hot water
- 2 cups cold water
Directions
- Dissolve the lime gelatin in 2 cups hot water. Add 2 cups cold water. Pour into a 14x10x2 pan. Chill until partly set.
- Dissolve the lemon gelatin in 1 cup hot water in the top of a double boiler. Add the marshmallows and stir until melted.
- Remove from heat. Add the 1 cup drained pineapple juice and the cream cheese. Beat until well blended and stir in the pineapple. Cool slightly.
- Fold in the whipped cream and mayonnaise. Chill until thickened.
- Pour over the lime gelatin as a layer. Chill until almost set.
- Dissolve the cherry gelatin in 2 cups hot water. Add 2 cups cold water. Chill until syrupy. Pour over the pineapple layer.
- Chill until firm.
Notes
- The original ingredient list says "1 can crushed pineapple juice." It most likely means a can of crushed pineapple, whose juice is the cup of pineapple juice used above. The can size is not given.
