Potato Candy

Ingredients

• 1 medium potato
• 1 lb. powdered sugar
• Dash of salt
• Peanut butter
• 1 tsp vanilla

Directions

1. Boil the potato, then mash until smooth, adding only the salt and vanilla to the potato.
2. Add powdered sugar until the mixture is stiff enough to roll.
3. On a powdered-sugar-dusted surface, roll the mixture until it is about 1/4 inch thick (you may have to divide the mixture in half to do this).
4. Spread the surface with peanut butter. Roll it up like a jelly roll. Chill if desired.
5. Cut the roll into slices.

Notes

• If I have leftover mashed potatoes, I use that to make the candy.
