Pillsbury Devil's Food Cake Mix Cookies

Ingredients

• 1 box Pillsbury Devil's Food Cake Mix
• 1 tsp vanilla
• 2 eggs (large or medium)
• 1 tsp baking powder
• 1/3 cup vegetable oil
• Granulated sugar, for rolling

Directions

1. Mix the eggs, oil, and vanilla in a bowl until combined. Be sure not to whip the eggs.
2. Add in the baking powder and cake mix, use a spoon or stiff spatula to make a dough.
3. Put in the fridge or freezer for a few minutes to cool so it's easier to scoop.
4. Use a medium scoop to make dough balls (can roll in hands after scooping for a neater cookie).
5. Roll the balls in sugar (could use sprinkles, fine chopped nuts, etc.) and place onto parchment paper on a cookie sheet.
6. Bake at 350°F for 10 minutes. Let set on the hot tray for 1 minute before cooling on racks.
7. Cool completely and store in an airtight container.

Notes

• This makes about 20 cookies; if you make a different size, adjust the baking time.
