Pecan Pie Bars
Ingredients
Crust:
- 2 c. flour
- 1/3 c. white sugar
- 1/4 tsp. salt
- 2/3 c. butter
Filling:
- 3 eggs
- 1 c. corn syrup
- 1/2 c. brown sugar
- 1/2 cup white sugar
- 2 Tbsp melted butter
- 1 tsp. vanilla extract
- 1 2/3 c. pecans
Directions
- Preheat oven to 350°F. Generously grease a 9x13 pan.
- In a large bowl, stir together the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs (a stand mixer works well for this). Press the mixture firmly into the prepared pan.
- Bake the crust for 20 minutes.
- While the crust is baking, prepare the filling: in a large bowl, beat together the eggs, corn syrup, brown sugar, white sugar, melted butter, and vanilla. Gently stir in the pecans.
- Spread the filling evenly over the crust as soon as it comes out of the oven.
- Return the pan to the oven and bake for 25 minutes, or until set. Allow to cool on a wire rack before cutting into bars.
