Pappy's Shortcake for Strawberries

Ingredients

• 4 cups all-purpose flour
• 1 tsp salt
• 1/4 cup sugar
• 2 Tbsp baking powder
• 1 cup butter, cold
• 2 beaten eggs
• 1 1/3 cup light cream or half and half

Directions

1. Mix the dry ingredients together. Cut in the butter to form coarse crumbles (do not over mix).
2. Combine the eggs and cream in a separate bowl, then stir into the dry mix.
3. Spread into 2 greased 8-inch rounds or a greased 13x9 pan, building up the edges.
4. Bake at 450°F for about 15 minutes. Cool 5 minutes before cutting.

Notes

• Can slice into layers and pour strawberries and sugar mix over it, or eat plain. Best served warm.
