Nut Rolls
Ingredients
Dough:
- 1 box (8 ounce) Philadelphia Cream Cheese
- 1/2 cup sugar
- 1/2 cup butter
- 2 egg yolks (reserve whites for the nut filling)
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Filling:
- 2 cups sugar
- 32 ounces walnuts, ground fine
- 2 eggs
- 2 teaspoons vanilla
- Water, as needed
Directions
- Cream together the cream cheese, sugar, butter, and egg yolks (reserving the whites).
- Mix together the flour, baking powder, and salt. Add the creamed mixture to the dry mixture and form into balls. Cover loosely and refrigerate overnight.
- Mix the filling ingredients together, adding a tablespoon or two of water as necessary to get a good consistency. Fold in the whipped egg whites and also refrigerate this mixture overnight.
- Flour the surface and roll out the dough thin. Cut the dough into rectangles approximately 2" x 2" before spreading nut filling on and rolling up.
- Roll in white sugar before baking on parchment paper.
- Bake at 375°F for 9 minutes. Move to cooling racks as soon as they can be moved. Cool completely and store in an airtight container.
Notes
- I find that adding a bit of water and stirring up the nut filling before spreading it is helpful.
