Hope's Current Bread Dough
One batch makes several portions. See the shaping options below.
Ingredients
- 6 cups hot/warm tap water
- 1/3 cup light olive oil
- 1/3 cup honey
- 2 Tbsp salt
- 6 cups whole white wheat flour (Wheat Montana bakes really well)
- 3 Tbsp instant yeast
- 1/3 cup vital wheat gluten flour
- 2/3 cup soy flour
- 1 1/3 cup (ground) golden flax meal
- 6-7 cups more whole white wheat flour
Directions
- Mix the water, oil, honey, and salt to dissolve.
- Mix in the first 6 cups of flour thoroughly.
- Mix in the yeast. Add the gluten flour, soy flour, and flax meal thoroughly.
- Add the rest of the flour until just stiff enough to knead.
- Knead about 10 minutes.
- Shape as described below.
Shaping options
- 1 portion = 1 loaf: Shape and place in a sprayed loaf pan. Raise in a just-warm (lowest setting) oven about 20 minutes (not full size, but almost). Bake at 350°F for 35-40 minutes.
- 1 portion = 32 dinner rolls: Shape and place on a sprayed cookie sheet. Raise in a warm oven. Bake at 400°F for about 10 minutes, or 350°F for about 15 minutes.
- 1 portion = 12 burger buns: Shape and place on a sprayed cookie sheet. Raise in a warm oven. Bake at 400°F for about 12 minutes, or 350°F for about 17 minutes.
- 1 portion = 16 Smartdog buns: Shape and place on a sprayed cookie sheet. Raise in a warm oven. Bake at 400°F for about 10 minutes, or 350°F for about 15 minutes.
- 1 portion = 15 sweet rolls: Roll out, add filling, roll up, slice, place in a 9x13 pan and raise. Bake at 350°F for 25-30 minutes.
- 1/2 portion = 1 pizza crust: Roll out on a sprayed cookie sheet. Raise and prebake at 400°F for about 12 minutes, or add toppings after rolling out, let rest 10-15 minutes, and bake at 400°F for 20-25 minutes.
Notes
- For loaves, rolls, and buns, cool on a cooling rack and slice as desired when cool.
- Used in Focaccia.
