Flour Tortillas

Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/3 cup vegetable oil
- 1 cup warm water
Directions
- Mix the flour, salt, and baking powder in a large bowl.
- Add the oil and mix with your fingers until the mixture resembles coarse crumbs.
- Gradually add the warm water while mixing with your hand until a dough forms. The dough should be smooth and not sticky. You might not need all the water.
- Knead 2-3 minutes until smooth and elastic.
- Cover and let rest 30 minutes at room temperature.
- Divide the dough into 12 equal portions and roll into balls.
- On a lightly floured surface, roll each ball into a thin circle, about 1/8 inch thick.
- Heat a large skillet or griddle over medium-high heat. Cook each tortilla about 30-45 seconds per side, or until light brown spots appear.
- Keep the cooked tortillas warm by wrapping them in a clean kitchen towel.
Notes
- Don't stack the uncooked tortillas, as they will stick together.
- Make sure the skillet is hot enough. You should see bubbles forming when you place the tortilla on it.
