Easy Pasta Salad
Serves: about 20 people
pasta saladpepperonicoldpotluckmake-ahead
Ingredients
- 2 (1 lb) boxes Barilla spiral pasta
- 2 each green, red, yellow, and orange peppers
- 12-16 oz of 2-3 kinds of cheese (I like an orange one like cheddar and a white one like mozzarella, and possibly a mixed)
- 1 large bottle Kraft Zesty Italian salad dressing (any Italian dressing works)
- 1 package pepperoni slices (about 50) or a pepperoni log
Directions
- Make the pasta according to the package directions. Immediately cool in an ice bath, drain, and put into 1 or 2 large Ziplocs.
- Add enough Italian dressing to coat all the noodles. I like to do this the night before and let the noodles sit in the refrigerator overnight, but it can be done the same day as serving.
- Clean and cut the peppers into bite size pieces. Cube the cheese. Cut the pepperoni slices in half, or the log into bite size chunks. If you have someone who doesn't eat meat, put half aside without pepperoni.
- Gently stir the peppers, cheese, and pepperoni into the pasta until well mixed.
- Add more dressing and set the extra out for those who like to add more.
Notes
- This serves about 20 people with leftovers. You can cut everything in half for home or a small party.
