Cornbread
Ingredients
Dry ingredients:
- 1 cup masa harina
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
Wet ingredients:
- 1/4 cup honey
- 1 cup milk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup vegetable oil
- 1/4 cup sour cream
Cheese:
- 3/4 cup shredded Longhorn or Colby cheese, divided (1/2 cup in the batter, 1/4 cup on top)
- Additional honey, optional
Directions
- Preheat the oven to 375°F (190°C). Grease a 9-inch cast iron skillet or 9-inch square baking pan.
- In a large mixing bowl, whisk together the dry ingredients.
- In a separate bowl, combine the wet ingredients.
- Fold 1/2 cup of the cheese into the dry ingredients. Pour in the wet ingredients and stir until just combined. Be careful not to over-mix.
- Sprinkle the remaining 1/4 cup of cheese on top of the batter.
- Bake 25-30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Optional: brush the top with additional honey while still warm.
- Let cool in the pan 10 minutes before slicing.
