Chocolate Truffles
Prep: about 1 hr (chilling and freezing)

Ingredients
- 1 (12 oz) package chocolate chips
- 1/3 c. whipping cream
- 1/2 tsp. vanilla
- 12 oz. chocolate flavored candy coating
Directions
- Line a baking sheet with waxed paper; set aside.
- In a medium heavy saucepan, combine the chocolate chips and whipping cream. Cook and stir constantly over low heat until the chocolate melts.
- Remove the saucepan from heat and cool slightly. Stir in the vanilla. Beat the truffle mixture with an electric mixer on low speed until smooth.
- Drop the truffle mixture by teaspoons onto the prepared baking sheet. Chill in the freezer about 20-30 minutes, until firm.
- Shape the chilled truffle mixture into balls; place back on waxed paper and freeze approximately 30 minutes.
- Melt the candy coating in a heavy saucepan, stirring constantly until smooth. Using a fork, dip the truffles into the coating. Return to the baking sheet lined with waxed paper. Let stand until the chocolate coating is set.
Notes
- Truffles can also be rolled in almonds, hazelnuts, etc., or drizzled with white chocolate.
