Chocolate Peppermint Crunch Cookies

Ingredients
- 1 3/4 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/4 cups cocoa powder
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 cup Andes Peppermint Crunch chips
Directions
- Preheat oven to 350°F and line cookie sheets with parchment paper.
- In a medium bowl, combine the flour, baking soda, and salt. Sift the cocoa and add to the flour mixture. Set aside.
- In a large mixing bowl, cream together the butter and sugars until light and fluffy. Add the eggs and vanilla and mix until well combined.
- Stir in the flour mixture until just combined. Mix in the peppermint crunch chips and white chocolate chips.
- Using a medium cookie scoop, drop onto the prepared baking sheets.
- Bake for 9-11 minutes. Cookies will still be soft in the middle.
- Allow the cookies to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
